La col de bruselas es una pequeña hortaliza que posee un ciclo de vida bienal y se deriva de las coles rizadas. Este es un vegetal diminuto, cuyo tamaño se asemeja al de una nuez, de hojas color verde amarillento o verde grisáceo, con un sabor similar al de las otras coles, sin embargo, este es más intenso.
Esta planta cumple su ciclo de vida en dos años, durante el primer año de vida de esta planta, solo se genera la formación de las coles en sus yemas axilares, mientras que en su segundo año florece, brotando en los extremos de los tallos unas flores que se sitúan en racimos y son de color amarillo.
La col de bruselas posee en su composición una cantidad considerable de vitamina C, la cual se encarga de la fortificación del sistema inmunológico, favorece la producción de colágeno y glóbulos blancos.
