El radicchio también denominado popularmente achicoria roja es un tipo de cogollo de la misma familia que las endivias o la escarola. Está formado por hojas moradas con vetas blancas y tiene una textura crujiente.
El radicchio es uno de los alimentos permitidos en las dietas para adelgazar. Contiene un bajo nivel calórico y además es muy rico en agua. En la región del norte de Italia se acostumbra a comerla en recetas de risotto y platos de pasta.
Destaca su aporte en provitamina A y vitaminas del grupo B, minerales como el potasio, el calcio y el magnesio, y su acción antioxidante. La achicoria es muy valorada por sus propiedades digestivas gracias a la inulina que se encuentra principalmente en los nervios y provoca su sabor amargo, estimula la secreción de los jugos digestivos, es un tónico que favorece la función del hígado y la vesícula biliar.
