El nombre de shiitake procede de las palabras japonesas “shii” (hace referencia al árbol japonés shiia, donde crece el shiitake de manera natural) y "take” (hongo).
El hongo shitake se utiliza en una variedad de platos, desde salteados y sopas hasta guisos y sushi. Su sabor robusto y su capacidad para potenciar otros sabores lo hacen esencial en la cocina asiática y más allá.
Actualmente, es el segundo hongo comestible más popular en el mundo, solo por detrás del champiñón.

Los hongos shitake frescos se conservan mejor en el refrigerador. También se pueden secar para su uso a largo plazo.
