La lechuga escarola, también conocida como endivia, es una variedad de lechuga de la especie Cichorium endivia. Se caracteriza por sus hojas anchas y rizadas, con un sabor ligeramente amargo. Es una verdura de hoja verde oscuro que agrega un toque de amargor y textura crujiente a las ensaladas y otros platos frescos.
La lechuga escarola se utiliza principalmente en ensaladas, aportando un sabor y una textura distintivos. También se puede cocinar al vapor, saltear o asar ligeramente para suavizar su amargor y realzar su sabor. Combina bien con ingredientes dulces como frutas, frutos secos y aderezos agridulces.
Almacenamiento
Para mantener la frescura de la lechuga escarola, es mejor almacenarla en el refrigerador.
Se recomienda lavar y secar las hojas antes de guardarlas en una bolsa de plástico perforada o un recipiente hermético con papel de cocina para controlar la humedad.
